Ingredients:
300g oyster mushrooms, chopped
1 onion, finely chopped
2 garlic cloves, minced
4 cups vegetable broth
1 cup coconut milk
1 tsp ground black pepper
Fresh cilantro for garnish
Instructions:
Heat a pot and sauté onions and garlic until translucent.
Add the mushrooms and cook for 5 minutes.
Pour in the vegetable broth and bring to a boil.
Stir in coconut milk and simmer for 10 minutes.
Season with pepper and garnish with cilantro before serving.
